Product Description
Glucose oxidase (β-d-glucose: oxygen 1-oxidoreductase; GOx, EC 1.1.3.4) is an oxidase with several large-scale technological applications, among them d-gluconic acid production.
A large number of microorganisms produce glucose oxidase, including plants, (red algae, citrus fruits), animals (e.g., insects), bacteria, and fungi. The main purpose of glucose oxidase in these sources is to generate hydrogen peroxide (a coproduct of the enzyme catalytic action), which acts as an anti-bacterial and anti-fungal agent. For example, glucose oxidase is found in honey, and the anti-bacterial activity is strongly dependent on the accumulation of hydrogen peroxide in the product.
